What does "75ohm" cable mean exactly?

OK, so SPDIF and old component video cables used to be 75ohm something something....

So, how come these cables are 75ohm. Are they terminated into a plug that has 75ohm resistance?

I want to know since I want to strip some old 75ohm component video cables and do something else with it.

Terminations (RCA plugs will be removed. Will this mean the cable is not "75ohm" anymore ?
