Normandy chicken, nice recipe to try. For the wife's 50 th I cooked 40 pieces of chicken, using 4 number 12 flat bottom cast iron pots (I think a 12 platboom = number 3 three legged pot).
I use Brandy instead of the Calvados in the recipe. Use less cream than the recipe. I bought fresh chicken but did put them in a brine for few hours. You can prep ingredients by browing the chicken, onions and mushrooms separatly and keep them in the fridge. Then easy t combine, flamby the brandy, add Apple Ciders, in the 12 Platboom, I used 2 x Hunters per pot. Add cream in last 20 minutes. ENJOY
