Which RAID for FreeNAS (HP MicroServer)

So, up to this point I have been 'test' running my HP MicroServer NAS with 2x 250GB HDDs, mounted standalone... I finally have 4x 2TB HDDs and thought I was ready to go with RAID, but now Im not sure...

Initially I was going to configure them in a RAID 5 config (giving me 6TB in total), however, I read some horror stories of problems rebuilding RAID5 in FreeNAS after a disk failure.

It seems that RAID 5 with ZFS is the recommended option, but this would mean adding extra RAM (6GB min), which Im not really up to. The alternative is to go with UFS - which has lower write performance - however I also ready that UFS RAID is more problematic to recover.

Im starting to think that RAID 5 is not the option for me -  if rebuilding a failed RAID on either ZFS/UFS is going to be a problem.

So, my alternatives are :
- 2x RAID 1 - loss of efficiency (only 4TB total storage), but easy to recover
- 1x RAID 1 , 2x 2TB Standalone ( Backup data, music, pics and 'collectable movies' on RAID, everything else on the standalones)

The thing is, I need to decide now before I consolidate my data, as changing from RAID 1 to RAID 5 somewhere down the line is going to be a mission.

So, Id like to hear the communities opinions - what are you guys using ?
Anyone with experience rebuilding a ZFS and UFS RAID on FreeNAS ?
