Spicy Bread & Butter Pickles

Such an easy concoction - for so much enjoyment. Goes exceptionally well with grilled cheese.....

Ingredients:

2 x large cucumbers
4 x large brown onions
4 x large green peppers
4 x red habaneros
4 x orange habaneros
500ml apple cider vinegar
500ml white vinegar
2 packets pickling spice (or, if you cannot find same, 2 tablespoons mustard seed, 1 tablespoon ground turmeric, 2 tablespoons celery seed, 1 teaspoon whole cloves & 4 or 5 bay leaves)
5 cups white sugar
500ml coarse salt
5 cloves garlic, chopped.

Method:

Thinly slice the cucumbers, peppers, onions & habaneros (think julienne thin slices). Mind your fingertips.....
Place into a bowl or two, mix in the coarse salt.
Cover and leave for 3 to 4 hours to allow the moisture to be drawn out.

Mix vinegars, sugar, garlic & pickling spice (or the spices listed above if you cannot find pickling spice) & bring to a boil over high heat.
Drain liquid from cucumber mix & add to boiling vinegar mix. Add garlic.
Remove from heat as it begins to boil.

Transfer to sterile jars, seal & place in fridge to cool.
Allow 3 to 4 days before sampling. Best after 10 days to 2 weeks.

You can leave the habaneros out if you do not want it spicy, or replace with jalapenos if you prefer a milder version. I've done this mix with piri-piri chilies, and with serano's, and have found that for my tastebuds the habaneros are perfect!
