Recommended finish for a Maple table ?

Thank you to those who have already offered some advice concerning this. :)

I am in the process of building a maple dining room table and would appreciate some more advice from those of you who know a bit (or a lot) about finishing.

1. I refuse to spray. I would like to apply with a brush or rub an oil in.
2. I would like a reasonably light finish that will not "yellow" over time.
3. Preferably must bring out the patterns in the wood slightly.
4. Must cope with the odd spillage and some heat.
5. Good UV protection.
6. Must cope with possible expansion and contraction of the wood.

In my searching, I have read about various options such as tung oil, water based acrylic or polyurethane, solvent based polyurethane...

Here are some photos of an off-cut. The wood is dry in the first two pics.
In the other pics, I have wiped it with a wet sponge. I quite like the color of it wet... darker would be fine as long as it doesn't go yellow or mess too much with the natural appearance of the wood.
