I've made these before but a big one, and it was delish.
Thought I'd try and make some mini bases, I unfortunately chowed them all down before I could try it with some toppings.
1 Head of Cauliflower
1.5 cups of grated Cheddar
2 Eggs
Salt pepper and Herbs (Italian + Basil) to taste,
Grate or process the Cauliflower to about rice grain size, and Microwave on full about 10 - 15 min till squishy.
Put the Cauliflower in a doek and twist and squeeze all the water out of it and knead it like dough. The harder you squeeze the better the results.
Place the doek in a small towel and squeeze that senseless also.
Remove from doek and pop in a bowl, should be a moist mush.
Add the two eggs, cheese, spices etc and mix.
I used a cookie press but you can also spoon it onto oven paper or silicon like I did, I like the silicon bake sheet, everything just slides off.
Bake at 180 degC with grill on medium and keep an I and nose on it, should take about 15-20 min.
Try to resist eating them all right there and then, try with some toppings.
