I have never actually met a woman who likes steak rare or medium rare. Every now and then the wife will try a piece of mine, but unable to convince her the juiciness is not bloodiness.  :facepalm:

Reverse sear on a proper 2" thick cut of aged meat...from an older cow perhaps.,,,with a nice strip of fat singed on an open flame.

My wife (then gf) once ordered steak well done and I asked for the bill. When we married I chucked a block of margarine into the rubbish bin. Some things one just cannot compromise on.

@Drifter: use a meat thermometer and cook by internal temperature if one is preparing a steak for people ordering well done. Anything beyond medium one best prepare like chicken...in a microwave.

From that illustration, I have mine between rare and medium rare.

But in reality I usually order medium rare as I have ordered so many medium rares in the past, only to be presented with a rare to a blue, which I find cools too fast and congeals unpleasantly.

Medium rare for me as well. And grain fed. I'm not a fan of grass fed beef at all. Gamey and lean beef is not to my taste. If I want that I'll eat venison.

+1... usually medium for me... but if you can’t get it right rather aim for medium-rare, that’s great too.

My cousin worked as a waiter in his teens. Best respond he ever got when asking a client how he wanted his steak... “son, if there were a good vet in the house, he should be a able to save it”

Interesting. I do 1h30 @ 54C, then onto the coals for a quick sear. I might just try your recipe.

Edit: or perhaps I would stick to below 2h30:

Strong crust on cast iron, finished in the oven, Medium rare, else flame grilled on the coals with lots of oily marinade.
If my music is too loud, yours is too soft. :p

Just wanted to point out that your posts on this forum so far seem a little undercooked. Like a good steak, a proper 50 post count needs a good time to age and mature.

Salt and Pepper seasoning plus the 1minute per 1cm thickness rule - leave to rest for the same amount of cook time

My best is fillet on the bone on the braai or a T-Bone where you get some fillet and some sirloin with nice fat!
