Finally perfected the recipe & ratios :) Have done the mix below many times  & found it works perfectly with Weiss, Draught, Dunkel, IPA & Porter.

3 cups cake flour
1 cup grated cheese - use a mildly strong (oxymoron?) cheese - Kerrygold Mature Cheddar is great.
1 small or half large onion - finely chopped & fried in 1 tablespoon olive oil until transparent.
2 tablespoons brown sugar
1 teaspoon baking powder
50ml ground white pepper
2 tablespoons melted butter
1 cup finely chopped chives
1 cup finely chopped & dried chillies
500ml beer. You can use stout, weiss, lager, whatever you fancy. Experience has taught me that a stronger, more flavourful beer is better. Weiss works well for me, but I am partial to Weiss. Dunkel, Dark ales & porters also work well.
Avoid any Saison or Lambic - they are too fruity & ruin the chilli / onion flavours.

You can use 330ml beer, but then it is rather dry (and a PITA to mix!) 500ml gives you a nice top crust, but a moist bread without being soggy.

Mix all dry ingredients in a bowl
Add fried onions, chives & grated cheese
Slowly add beer & fold until mixed

Put into a greased loaf pan.

Pour melted butter over the top & bake at 180 celcius for 40 minutes.

Remove, allow to cool - best to eat whilst still warm, but slice with caution as it crumbles easily.
