Cathode vs. fixed bias

In my early delvings into valves, most of the circuits I've looked at (and Uncle Doug's videos) use cathode biasing. It certainly seems a lot easier than other forms. But then I saw an ad for some or other amp (grid biased) where they poured scorn upon amps using mere cathode biasing. Also, in Ufudu's awesome build PP 6550 integrated amplifier, he is using fixed bias in a cunning way. So obviously there's something to it.

What are the pros and cons of each, and what would influence your design decision?
