Wood lamination/slab questions.

After many years Charmain pulled enough of a puppy face to convince me to 'redo' the kitchen.
What we decided on was to replace the doors and drawer fronts and the Formica top needs to go.
Here are my thoughts.
Instead of replacing the Formica tops why dont I clad them with a 22mm solid timber top?
Charmain is not keen on the butcherblock look with narrow strips but I explained using too wide pieces has issues regarding warping etc.
Will 120-150mm do the trick? (Sapele)
Obviously the joints will be staggered on the long runs. Planning on using biscuits to align.
Good or bad idea to screw from the bottom through the Formica into the solid top to keep everything flat? Any glue/silicon between the wood and Formica? Wood movement issues?
Planning to use Osmo Top Oil (eye watering expensive but apparently the bees knees).
Any comments suggestions welcome.
