I have been playing on FreeCAD (once again a CAD package to learn) to get the optimum layout of the PV panels on the roof.
@Sarel.wagner I have decided that I will install 20 panels and be done with it.

After playing around with the Victron calculator using the custom characteristic values of the PV panels I have ordered, I found that two Victron SmartSolar MPPT 250/100-Tr VE.Can units will allow me to use any combination of up to a total number of 24 panels.

Victron has a very nice calculator that allows you to enter the PV panel specifications and allows you to play around with the number of panels in series and parallel.
